Recado de Amarillo
Guatemalan recados, 100% natural, gluten-free.
- 1 pound package.
- Yields 4 to 6 servings.
Preparation method:
- Place 2 pounds of meat (beef ribs or pork ribs) in a pot with 1/2 liter of water, without salt.
- Add pieces of carrot, potato, or squash (optional).
- Add the Recado de Amarillo Sazón del Jade.
- Cook and remove from heat when the meat and vegetables are ready.
Origin:
Recado de Amarillo is a thick, creamy stew that gets its distinctive color from the use of achiote (or annatto) and, in some regions, yellow chilies and yellow/orange tomatoes. This sauce is distinguished by being milder than Pepián or Kak’ik, offering a warm, earthy flavor that works wonderfully with pork or chicken. Although its origins are not ceremonial like other dishes, it is a staple of everyday family cooking in departments such as Jutiapa and Chiquimula, where the simplicity of its ingredients enhances the quality of the meat.
Pairings:
Due to its mild, earthy flavor, Recado de Amarillo pairs exceptionally well with creaminess. It is traditionally served with a large portion of white rice and accompanied by white corn dough tamales or corn tortillas. Drinks should complement without overshadowing; tamarind juice or simple lemon water offer the perfect acidic contrast. As for alcoholic beverages, a craft beer such as a Blonde Ale or a dry rosé wine enhances pork or chicken without competing with the complexity of the achiote.
