Recado para Hilachas

Concentrated tomato and spice recado, frozen.

  • 100% Guatemalan product, gluten-free.
  • 450g presentation.
  • For approximately 1.5 to 2 pounds of meat.
  • Yields 4 to 6 servings.

Preparation method:

  • Cook 2 pounds of meat of your choice (chicken, beef, or pork) WITHOUT SALT.
  • In a pot, heat the Hilachas sauce and add 2 cups of the broth where the meat was cooked.
  • If desired, you can add cubed potatoes and carrots and let it simmer until the vegetables are cooked.

Origin:

Hilachas Sauce is a stew traditionally prepared with beef (skirt or sirloin tip) cooked until it can be shredded, hence its name. Although it does not have a ceremonial origin like Pepián, it is the epitome of Guatemalan “home cooking” or “everyday food”, appreciated for being economical, nutritious, and comforting. Its distinctive sweet and sour flavor comes from a tomato sauce base, enhanced with the acidic touch of miltomate and the color and flavor of guaque and pasa chili. It is a dish that stands out for its simplicity and the abundant use of potatoes and carrots.

Pairings:

To enjoy the authentic experience, Pepián is traditionally accompanied by sweet and refreshing drinks, such as Horchata or Fresco de Chilacayote, which cut through the thickness of the sauce. At the table, the essential accompaniment is white rice and corn tamalitos or travel tamalitos. If you are looking to elevate the experience, its body and flavor of toasted spices combine excellently with a cold Lager beer or, if you prefer wine, a medium-bodied red like Syrah or Malbec.
