Recado para Tamal
Concentrated tomato and spice paste, frozen
- 100% Guatemalan product, gluten-free.
- 450g presentation.
- For approximately 1.5 to 2 pounds of meat or a 3-pound chicken.
- Yields 4 to 6 servings.
Preparation method:
- Heat the tamale filling with 1/4 cup of water.
- Use 6 tablespoons of recado for each tamale.
- It can also be used as a sauce for chicken, beef, or pork.
Origin:
Tamal filling (or Tamal Colorado) is the culinary heart of Guatemalan festivities, especially during Lent, All Saints’ Day, and, crucially, Christmas Eve. Its origins are mixed, based on a rich sauce of dried chilies (mainly guaque and pasa chilies), tomatoes, and spices, to which a sweet and sour touch is added with plums and olives. This recado is distinguished by its slow cooking method and its use as a key filling, along with the corn dough (nixtamal), to seal the tradition of tamales wrapped in banana leaves.
Pairings:
Since tamales are a complete and dense dish, the traditional pairing is simple and focuses on beverages that accompany celebrations. The essential accompaniment during the holidays is French bread or butter bread to dip in the leftover sauce, and sweet tamales for dessert. Hot drinks are a must: thick chocolate, coffee, or fruit punch (during Christmas) perfectly contrast the complexity of the filling, making tamales a nutritious and traditional breakfast or dinner.
