Recado para Kak’ik

Guatemalan recados, 100% natural, gluten-free.

  • 850g package.
  • For approximately 3 to 3.5 pounds of meat.
  • Serves 8 to 10 portions.
  • Semi-spicy.

Preparation method:

  • Place 3 pounds of turkey meat in a pot.
  • Add the Recado de Kak’ik Sazón del Jade
  • Bring to a boil for 30 minutes over low heat and add a sprig of cilantro and mint.
  • Serve with rice and cornmeal tamales.

Origin:

Kak’ik is an ancient broth originating in the Alta Verapaz region, whose name comes from the Q’eqchi’ language, where kak means “red” and ik means “hot or spicy.” This ceremonial dish, historically prepared with turkey meat (chompipe or chunto), is characterized by its deep red color, derived from achiote and roasted chilies, and the unmistakable aroma of wild cilantro (samat) and mint. It was declared Intangible Cultural Heritage of the Nation in 2007.

Pairings:

As it is a broth, Kak’ik is traditionally served piping hot and with all the trimmings. The classic pairing calls for white rice and small white tamales (pochitos), which are dipped in the broth to capture its flavor. A slice of avocado and a touch of Cobán chili are essential additions that provide the perfect balance. As for beverages, it is traditionally accompanied by a cocoa drink or, to contrast its richness, with a fresh tamarind or hibiscus juice.
