Recado para Jocón
Concentrated frozen miltomate and spice paste.
- 100% Guatemalan product, gluten-free.
- 450g presentation.
- For approximately one 3-pound chicken.
- Yields 4 to 6 servings.
Preparation method:
- Cook 2 pounds of meat of your choice (chicken, beef, or pork) WITHOUT SALT.
- Heat the Jocón seasoning in a pot and add 2 cups of the broth used to cook the meat.
- If you wish, you can add diced potatoes and carrots and simmer until the vegetables are cooked.

El Recado de Jocón es un guiso espeso de origen prehispánico, aunque su versión actual es mestiza, popularmente asociado a la región de Izabal y la costa.Recado de Jocón is a thick stew of pre-Hispanic origin, although its current version is mestizo, popularly associated with the Izabal region and the coast. Its name comes from the Kaqchikel word “jok’om,” which means “the one who skins.” The most distinctive feature of Jocón is its bright green color, achieved by a base of miltomate or tomatillo, complemented by cilantro and green chilies, which give it a herbaceous and slightly acidic flavor. Its thick texture comes from grinding pepitoria (pumpkin seeds) and toasted sesame seeds, making it one of the most popular dishes, traditionally prepared with chicken or hen.

Jocón, with its fresh, tart, and herbaceous flavor, is one of the most versatile condiments. The classic pairing calls for white rice and the indispensable warm corn tortillas, which are used to mop up and enjoy every drop of the sauce. To enhance its green notes, it is ideal to accompany it with a sweet drink that balances the acidity of the miltomate, such as Fresco de Horchata or Lemonade with Mint. If you prefer alcohol, a cold drink such as white rum or a dry, mineral white wine (such as Sauvignon Blanc) complements the herbs in the stew without overshadowing its fresh flavor.
