Recado para Pepián

Concentrated tomato and spice recado, frozen.

  • 100% Guatemalan product, gluten-free.
  • 450g presentation.
  • For approximately 1.5 to 2 pounds of meat or a 3-pound chicken.
  • Yields 4 to 6 servings.

Preparation method:

  • Cook 2 pounds of meat of your choice (chicken, beef, or pork) WITHOUT SALT.
  • In a pot, heat the Pepián recado and add 2 cups of the broth where you cooked the meat.
  • If desired, you can add cubed potatoes and carrots and let it simmer until the vegetables are cooked.

Origin:

Pepián is a ceremonial dish with deep Kaqchikel roots in the highlands of Guatemala, where it was originally served in important rituals. It is the perfect result of cultural blending, fusing indigenous ingredients (chiles, tomatoes, and toasted seeds like pepitoria) with colonial spices and meats. This historical balance of flavors earned it the declaration of Intangible Cultural Heritage of the Nation in 2007.

Pairings:

To enjoy the authentic experience, Pepián is traditionally accompanied by sweet and refreshing drinks, such as Horchata or Fresco de Chilacayote, which cut through the thickness of the sauce. At the table, the essential accompaniment is white rice and corn tamalitos or travel tamalitos. If you are looking to elevate the experience, its body and flavor of toasted spices combine excellently with a cold Lager beer or, if you prefer wine, a medium-bodied red like Syrah or Malbec.
